The Initial Setup
Setting up your water keifer is straightforward. Follow these steps to get started:
Mixing with Water and Sugar
In a clean glass jar, place your 20g of water kefir grains. Then, pour in 250ml of filtered water and add 1 tablespoon (15g) of sugar.
Tip: Opt for organic cane sugar or natural sugars to enhance flavor and fermentation.
Gently stir the mixture until the sugar is fully dissolved.

Fermentation Time
Cover the jar with breathable material, like cheesecloth or a coffee filter, to allow air circulation while keeping contaminants out. Let it sit at room temperature for 48 hours, allowing the grains to ferment the mixture.
First Fermentation: Getting the Process Going
After 48 hours, it’s time to move to the first fermentation stage.
